What is a commissary kitchen?

A commissary is a licensed commercial kitchen you rent instead of building your own. You get inspected, health-approved production space, so you can legally make food to sell without the cost of your own build-out.

What kinds of kitchen space do you have?

Retail kitchens, wholesale kitchens, and USDA-compliant kitchens, plus cold prep stations. Which types are available depends on the location, so check the page for the commissary you are interested in.

Which locations have USDA-certified kitchens?

Camarillo and San Luis Obispo. Camarillo is a USDA certified facility with three commercial kitchens and two prep stations. San Luis Obispo has four commercial kitchens including one USDA and one wholesale.

Do you have food truck parking?

Yes, at Camarillo and San Luis Obispo. Camarillo has 23 truck spots and two wash out stations. San Luis Obispo has 20 spots and two truck wash stations. Both are equipped with water and electricity. Redondo Beach does not offer truck parking.

Is there cold and dry storage?

Yes. All three locations list cold and dry storage along with equipment storage, so you are not moving stock in and out for every production run. Ask the location you are interested in about walk-in cooler and freezer availability.

Can I rent space for an event or a tasting?

San Luis Obispo has 1,500 square feet of tasting and event space. Call that location to check availability for launches, pop-ups, and private bookings.

Do you help with health department approval?

Yes. Getting through your county health department is the part most first-time food businesses get stuck on, and walking clients through it is a core part of what we do. That includes guidance on county requirements, inspections, and food safety classes.

How do I get started?

Submit an application telling us what you make and which location you want. Our team reviews your information and gets in touch to discuss the kitchen options available. From there we personalize your plan and contract, and help you collect the health department documents your county requires.

Can I see the kitchens before I apply?

Yes. Each location page has walkthrough videos of its kitchens and work areas, so you can see the actual space before you call. You can also call any commissary directly to arrange a tour.
